Ever seen Wine and chocolate, Heston Blumenthal style? Heston’s take on food has inspired budding chefs all over the world to walk down the least trodden path. He is known to come up with the most unusual recipes that exhibit molecular gastronomy at its finest. His creation, The Iced Chocolate Wine is one such strange combination. A simple yet familiar tasting dessert, this is sure to make your dinner guests elated.
The recipe calls for the following ingredients:
- Half a bottle of good wine. Pick a full bodied one such as a Cabernet Sauvignon.
- 100 ml of milk
- 40 g of good chocolate, with a cacao percentage over 30%
- Half a tablespoon of red wine vinegar
Reduce the wine to half its volume. Doing this will remove the alcohol present in it. Boil milk in a new pan and add the chocolate to it. Stir it until it is melted and fully combined with the milk. Add in a pinch of salt to enhance the sweetness. Don’t worry, Heston knows what he’s doing. Let both the liquids cool down and once that’s done, combine them together and pass it through a fine sieve. Add in the red wine vinegar, give it a good stir and pour it into a shallow tray so that it freezes evenly. Run a fork through the mixture at regular intervals.
Once this is completely frozen, spoon it into a dessert goblet and shave some fine chocolate over it to give it a fancy touch. You could also pair it up with a fancy beef dish and give your guests a unique gastronomical experience.
